Yak Meat Now Available for Fall in the Green Mountains

The Green Mountains in autumn are truly a spectacular site – fall foliage, stunning mountain vistas, crisp days, and cool nights.

And now…the unique taste and flavor of yak.

Vermont’s newest farm business – the Vermont Yak Company – will be selling yak meat and sausage (as well as more T shirts featuring our popular Vermont Yak logo) throughout September and into October as supply lasts. “We’ve been debuting our yak meat for one month now at restaurants and the Saturday morning Waitsfield farmer’s market,” explains Susan Laskaris, “and folks seem to really enjoy the distinctive taste of yak.”

Customers who’ve sampled yak at “American Flatbread,” “Timbers” restaurant’s “Taste of the Valley” event at Sugarbush, and the farmer’s market agree that yak adds a whole new dimension to the wonderfully wide range of food items available during the fall harvest.

Interested customers can stop by the Waitsfield Farmer’s Market between 9:00 and 1:00 on Saturday mornings on the green in downtown Waitsfield, or make an appointment to stop by the farm and select some meat from our freezers. This is a fun way to visit with the yaks, as well!
