SUSAN'S YAK BURGERS
|
1 lb. ground yak
1 egg, slightly beaten
½ c. bread crumbs
|
½ c. finely minced onion
salt & pepper to taste
|
|
Mix all ingredients together and form into 4 burgers.
Grill over low heat. Be careful not to overcook!

KATE'S YAK MEATBALLS
|
2 lbs. ground yak
2 eggs
1 slice bread – moisten with water
½ c. bread crumbs
4 cloves garlic, minced
|
1 cup minced with parsley
1 tsp. salt
1 tsp. pepper
A bit of butter
2 lemons, sliced in their rounds
|
|
Preheat oven to 350 degrees. Mix all ingredients thoroughly, except lemons and butter.
Roll meat into golf ball sized balls (or smaller) – brown in butter in a skillet.
Layer with lemons in a deep casserole dish. Bake at 350 degrees for 30 minutes. Serve with fresh parsley and garlic.

YAK AND GREEN CHILI STEW
|
2 lb yak roast, cut into ¾ “ cubes
1 onion, chopped
2 or 3 cloves garlic, minced
2 -14 ½ oz cans diced tomatoes with juice
7 oz can diced green chiles
8.5 oz can whole-kernel corn, undrained
|
2 t. dried oregano leaves
1 t. ground cumin
½ t. ground red pepper
2 T. yellow corn meal
shredded cheddar cheese
|
|
Mix all ingredients except the corn meal and cheese in a 3 ½ qt. slow
cooker. Cover and cook on low 7 to 8 hours. Turn to high and stir in
cornmeal. Cook on high for 20 minutes. Serve topped with shredded
cheddar cheese.

YAKBURGER CASHEW
|
1 onion, chopped
2 T. butter
1 lb. ground yak
8 oz. egg noodles, cooked
4 oz. can mushrooms
½ c. stuffed green olives, sliced
½ lb cheddar cheese, sliced
|
1 can cream of mushroom soup
½ c. milk
½ t. salt
½ t. pepper
½ c. cashews
½ c. chow mein noodles
|
|
In an ovenproof dish, brown onion in butter, then add yak meat and
brown. Add cheese and let it barely melt. Mix rest of ingredients
except cashews and chow mein noodles, and pour over meat and
cheese. Bake uncovered at 375 degrees for 35 minutes. Top with
cashews and chow mein noodles, and bake 15 minutes more.

YAK-STUFFED PEPPERS
|
6 green peppers
6 T. onion, finely chopped
4 T. celery, finely chopped
2 cloves garlic, minced
2 T oil
|
1 lb ground yak
1 c. tomato puree
¼ t. pepper
½ t. salt
2 T. parmesan cheese
|
|
Slice tops from peppers. Chop and reserve tops. Scoop out seeds
and membranes from peppers. In skillet, cook onion, pepper tops,
celery, and garlic in hot oil until tender. Add meat and brown. Stir in
tomato puree, salt, and pepper. Fill peppers, sprinkle with cheese,
and place in a baking dish. Bake uncovered at 350 degrees for 35
minutes.

CHIPOTLE YAK CHILI
|
2 T. olive oil
6 cloves garlic
2 lb. ground yak
1 large onion
2 chipotle chilies in adobo sauce, chopped
½ t. black pepper
1 can black beans (optional)
|
1 t. salt, or to taste
1 28 oz can diced tomatoes
1 bay leaf
1 t. ground cumin
2 t. dried oregano
3 T. chopped fresh cilantro
|
|
Brown the garlic, onion, and ground yak in the olive oil. Add the rest of
the ingredients except the cilantro. Simmer partially covered for about 45
minutes, stirring occasionally. Stir in the cilantro and simmer uncovered
for 5 minutes. Add more salt and pepper to taste if necessary.

CROCK POT YAK POT ROAST
|
3 lb.Yak Chuck Roast
1 tsp. salt
¼ tsp. pepper
¼ tsp. paprika
|
1 T. minced garlic
¼ cup minced onion
1 cup of yak bouillon (or beef bouillon)
|
|
Brown the garlic, onion, and ground yak in the olive oil. Add the rest of
the ingredients except the cilantro. Simmer partially covered for about 45
minutes, stirring occasionally. Stir in the cilantro and simmer uncovered
for 5 minutes. Add more salt and pepper to taste if necessary.

BARBECUED YAK AND BEANS
|
2 lb. yak stew meat, cut into ½ inch cubes
Salt and pepper
¼ tsp. pepper
|
3/4 cup beef bouillon
2 – 1lb. cans black beans
|
|
Sprinkle yak meat with salt and pepper. Place in crock pot with
barbecue sauce and bouillon. Cover and cook on low for 6 to 8
hours. Add beans and cook on high for 15 to 20 minutes. Makes
6 servings.
